Not everything has to be visible from the very beginning. The gallery with the party photos, for example, only makes sense after the celebration. Hiding is there for cases like that. And when a section really is not needed anymore, you delete it.
Hiding a section
Hover over the entry in the list „Abschnitte" (sections) and open the three dot menu.
Choose „Ausblenden" (hide).
The section is kept with all its texts and images, it is just not shown on your public website. In the sidebar you recognize it because it is shown faded, and in the preview by the note „Ausgeblendet" (hidden). You can still click it and keep working on it. To show it again, choose „Einblenden" (show) in the same menu.
Deleting a section
Open the three dot menu and choose „Löschen" (delete). Alternatively you click the bin icon at the top right in the settings of the section.
Confirm the question „... löschen?" (delete ...?) that comes with the note „Dieser Abschnitt wird unwiderruflich entfernt." (this section will be removed for good).
After that you are back in the section list. If it was a slip, bring the section back right away with undo (Cmd/Ctrl+Z).
Good to know: Undo only works as long as you do not reload the editor. After a reload, a deleted section is gone for good. If you are unsure, better hide it instead of deleting it.
Why the hero cannot be deleted
The hero is marked as a „Pflichtsektion" (required section), and that also shows on its entry in the list. It is the head of your website, which is why its menu offers no „Löschen" (delete). Hiding and duplicating do work for the hero too.

Yes, completely. Hiding only changes whether the section is shown publicly.
